Sauteed Zucchini and Tomatoes

  1. In large skillet, heat italian dressing over medium heat.
  2. Add zucchini and onion; cook, stirring occassionally, 5 minutes or until vegetables are almost tender.
  3. Stir in tomatoes with juice, basil, salt and pepper.
  4. Bring to a boil.
  5. Reduce heat to low and simmer uncovered, stirring occassionally, 20 minutes or until zucchini is tender and sauce is slightly thickened.
  6. Serve with grated parmesean cheese if desired.
