Sally's Potatoes 'N Carrots Recipe
- 2 1/2 c. grated raw potatoes (can use red potatoes)
- 1 1/2 c. grated raw carrots
- 1/2 c. grated onion
- 1 can cream of celery soup, undiluted
- 1/2 c. lowfat milk
- Salt & pepper
- 1/2 c. grated cheese
- Heat oven to 375 degrees.
- Combine potatoes and onion in buttered 9"x13" dish.
- Add in carrots.
- Blend soup, lowfat milk, salt and pepper.
- Pour over vegetables.
- Cover and bake 1 hour.
- Uncover and sprinkle with cheese.
- Serves 8.
