Stuffed Fish
- 1 1/2 lb. flounder
- 3/4 c. carrots, diced (1 large)
- 1 c. scallions, chopped (1 bunch)
- 3/4 c. mushrooms, chopped (3 large)
- 1/2 c. celery, chopped (1 stalk)
- 4 Tbsp. butter or olive oil
- 1 c. fresh bread crumbs (2 slices) or 3/4 c. unseasoned crumbs (dry)
- juice of 1 lemon
- Saute vegetables in 2 tablespoons butter or oil.
- Stir in crumbs and 1/4 teaspoon salt.
- Place half of the flounder in greased (Pam) 1 1/2 quart (10 x 7-inch) glass pan. Brush with half of the lemon juice. Spoon mixture on top.
- Layer rest of fish on top of vegetable mixture. Brush balance of lemon juice on top. Drizzle with 2 tablespoons melted butter (or 2 tablespoons olive oil). Sprinkle paprika on top. Cover with aluminum foil and bake 30 minutes at 350u0b0 or until fish flakes when tested. Serve from baking dish.
