Hamburger Chowder

  1. Melt butter in a large saucepan or Dutch oven.
  2. Add onion, carrots, celery and green pepper.
  3. Cook until tender, but not too brown.
  4. Add beef; cook until crumbly.
  5. Stir in tomato juice, potatoes and seasonings.
  6. Cover and cook over low heat until vegetables are tender, 20 to 30 minutes.
  7. Combine flour with 1 cup milk.
  8. Beat until free of lumps.
  9. Stir into soup mixture.
  10. Add remaining milk; heat, stirring frequently, but do not boil.
  11. Makes 10 servings.
