Hamburger Chowder
- 2 Tbsp. butter
- 1 large onion
- 4 to 5 carrots, sliced
- 1 c. chopped celery
- 1 c. chopped green pepper
- 1 lb. ground meat
- 2 c. tomato juice
- 3 to 4 medium potatoes, diced
- 1 1/2 tsp. salt
- 1 tsp. seasoned salt
- 1/8 tsp. pepper
- 1/3 c. flour
- 1 qt. milk
- Melt butter in a large saucepan or Dutch oven.
- Add onion, carrots, celery and green pepper.
- Cook until tender, but not too brown.
- Add beef; cook until crumbly.
- Stir in tomato juice, potatoes and seasonings.
- Cover and cook over low heat until vegetables are tender, 20 to 30 minutes.
- Combine flour with 1 cup milk.
- Beat until free of lumps.
- Stir into soup mixture.
- Add remaining milk; heat, stirring frequently, but do not boil.
- Makes 10 servings.
