Jerry'S Chicken Casserole
- 9 slices white bread, crusts removed
- 4 c. cooked chicken (8 breasts), cut up
- 1/2 lb. fresh mushrooms
- 1/4 c. margarine or butter
- 4 well beaten eggs
- 1/2 c. mayonnaise
- 1 can drained, sliced water chestnuts
- 8 slices sharp processed cheese
- 2 c. milk
- 1 tsp. salt
- 1 can mushroom soup
- 1 can celery soup
- 1 small jar chopped pimento
- 2 c. buttered bread crumbs
- Line a buttered 9 x 12-inch baking dish with bread slices.
- Top with chicken.
- Saute mushrooms in margarine (butter) 5 minutes. Spoon over chicken.
- Add water chestnuts.
- Dot with mayonnaise. Top with cheese slices.
- Combine eggs, milk and salt.
- Pour over chicken.
- Mix undiluted soups and pimento and spoon over casserole. Cover with foil and refrigerate overnight.
- Remove foil, put crumbs on top and bake, uncovered, at 350u0b0 for 1 1/2 hours.
- Serves 8 to 10.
