Cranberry Brie Bites
- 24 won ton wrappers (3 1/4 inches in diameter)
- 3/4 cup whole berry cranberry sauce
- 1 tsp lemon juice
- 1/2 tsp finely shredded lemon peel
- 1 round of brie (8 ounces), cut into 24 cubes about 3/4 inch in diameter
- 1 lemon zest curls for garnish
- Preheat oven to 350.
- Coat 24 miniature muffin cups with vegetable oil spray.
- Press won ton wrappers gently into cups, allowing ends to extend above tops of cups.
- Lightly coat edges of won ton wrappers with vegetable oil spray.
- Bake in a preheated oven 11 to 12 minutes or until cups just start to brown.
- Meanwhile, in a medium saucepan over medium heat, cook cranberry sauce 4 to 5 minutes, stirring occasionally, until hot.
- Remove from heat and stir in lemon juice and peel.
- When wrappers are done, remove from oven but maintain oven temperature.
- Place 1 cube of brie in each cup and cover pan with a sheet of aluminum foil.
- Return to oven and bake 3 to 5 minutes or until cheese softens.
- Remove from oven and top each with about 1 teaspoon of the cranberry mixture.
- Garnish with lemon zest curls.
