Easy Italian Crock Pot Soup - Frugal Family Favorite
- 1 lb ground beef
- 4 cups beef broth (I use bullion to make mine)
- 2 (10 ounce) canscans rotel (or use diced tomatoes and onions)
- 1 (10 3/4 ounce) can tomato soup
- water, 1 soup can
- 1 cup dried kidney beans
- 3 carrots
- 3 stalks celery
- salt or pepper
- 1 teaspoon garlic powder
- 2 tablespoons italian seasoning
- 2 -3 cups cooked rice
- Brown & drain the meat.
- I rinse mine as well.
- Add to crock pot,
- Chop the carrots and celery into small pieces and add in, followed by everything else but the rice.
- It is fine to just throw the beans in dry.
- Cook on low for 8 hours or high for 6.
- Before serving add cooked rice.
- If you like your soup more like gumbo in consistency use 3 cups rice, if you like it soupy just use 2 cups.
