Fajitas
- 1 lb. skirt steak or chicken, cut into 1/4-inch strips
- 2 Tbsp. Wesson oil
- 1 tsp. garlic powder
- 1/2 tsp. ground oregano
- 1/8 tsp. liquid smoke
- 2 Tbsp. lemon juice
- 1 tsp. seasoning salt
- 1/2 tsp. black pepper
- 3 Tbsp. oil
- 1 c. green pepper strips
- 1 c. tomato wedges
- 1 c. onion slices
- 1/2 c. salsa
- flour tortillas
- Combine first 8 ingredients and marinate meat 6 to 8 hours. Heat oil over high heat.
- Saute half the meat until it loses its pink color, then add half the bell pepper and onion.
- Cook until done.
- Place in another hot container; turn down heat to simmer. Add tomato wedges and salsa.
- Repeat with remainder of meat, onion and pepper.
- Serve immediately on flour tortillas.
