Apple Stuffed Pork Loin
- 20 ounces, weight Pork Loin, Thick Cut (3 Pieces)
- 1/2 Tablespoons Butter
- 1/2 cups Apples, Peeled, Diced Into Bite Size Pieces
- 1/4 cups Onion, Diced Small
- 1/4 teaspoons Salt, Plus More To Season Pork
- 1/4 teaspoons Pepper, Plus More To Season Pork
- 1/2 cups Apple Cider Or Juice, Divided
- 1 teaspoon Brown Sugar
- Preheat oven to 400 degrees F.
- Cut a pocket into the thickest part of the pork, being careful not to cut all the way through.
- Season the inside with salt and pepper, set aside.
- In an ovenproof skillet, add butter, apples, onions and salt and pepper.
- Cook until tender (about 5 minutes).
- Add 1/4 cup of apple cider and brown sugar.
- Stir until and most of the juice is evaporated.
- Add apple mixture into the pocket of each pork loin.
- If you have apple mixture left over, just leave it in the skillet.
- Add pork to skillet and brown on all sides.
- Add remaining 1/4 cup apple cider and bake pork in the oven for 30 minutes, flipping the pork halfway through cooking until pork is no longer pink.
- For garnish, I added a sprinkle of parsley over the top of my pork.
