Parmesan Yogurt Chicken
- 4 chicken breasts, boned and skinned
- 2 Tbsp. lemon juice
- cayenne pepper to taste
- 1/2 c. plain low-fat yogurt
- 2 Tbsp. low-fat mayonnaise
- 1 Tbsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1/2 tsp. thyme
- 1/4 c. green onions, sliced thin
- 1/4 c. Parmesan cheese
- Preheat oven to 350u0b0.
- Spray oblong casserole dish with Pam. Place chicken in casserole dish and dribble with lemon juice. Sprinkle with cayenne pepper.
- In small bowl, mix yogurt, mayonnaise, mustard, Worcestershire sauce, thyme and green onions; spread this mixture over chicken.
- Bake, uncovered, for 60 minutes.
- Drain off pan juices.
- Sprinkle chicken with Parmesan cheese.
- Broil until cheese is slightly browned.
