Mesclun With Oranges and Olives
- 12 cups mesclun or 12 cups other mixed salad greens
- 3 tablespoons olive oil
- 2 tablespoons orange juice
- 2 tablespoons balsamic vinegar
- 8 thin slices red onions, separated into rings
- 2 cups orange sections
- 23 cup kalamata olive (or mixed olives)
- 18 teaspoon salt
- 18 teaspoon black pepper
- Place greens in a large salad bowl.
- For the dressing, combine the olive oil, orange juice and vinegar.
- Pour over greens and toss gently to mix.
- Divide mixture among salad plates.
- Top with onion rings, orange sections and olives.
- Season to taste with salt and pepper.
