Bison Chili

  1. Saute onions, poblanos, celery, bell peppers, and garlic until translucent.
  2. Add meat and saute together.
  3. Mix together chili powder, cumin, and cayenne pepper and add to meat and vegetable mixture.
  4. Add diced tomatoes, kidney beans, and black beans.
  5. Add tomato-vegetable juice.
  6. Let simmer for 40 minutes, stirring occasionally.
