California Caviar Recipe

  1. Place the beans in a large pot with 3 c. water; bring to a boil, reduce heat and simmer 45-50 min or possibly till beans are just barely tender.
  2. Drain and rinse with cool water.
  3. Mix beans with remaining ingredients.
  4. Chill.
  5. Serve over lettuce or possibly as dip with baked tortilla chips.
  6. Makes 8-10 servings.
