California Caviar Recipe
- 1 1/4 c. dry black-eyed peas (8 ounce.)
- 1 c. green bell pepper (1 medium), diced
- 3/4 c. onion, diced (1 small)
- 1/2 c. green onion, finely minced
- 1/4 c. red bell pepper, diced
- 1/4 c. jalapeno chiles, finely minced and seeded
- 3/4 c. low-calorie Italian salad dressing
- Place the beans in a large pot with 3 c. water; bring to a boil, reduce heat and simmer 45-50 min or possibly till beans are just barely tender.
- Drain and rinse with cool water.
- Mix beans with remaining ingredients.
- Chill.
- Serve over lettuce or possibly as dip with baked tortilla chips.
- Makes 8-10 servings.
