Seafood Gumbo
- 1/2 lb. bacon, diced
- 1 stick butter
- 1 small bag okra, sliced
- 1 bundle scallions (green onions), diced
- 3 medium onions, diced
- 1 bell pepper, diced
- 5 stalks celery, diced
- 2 small cans tomatoes
- 1 tsp. parsley
- 1 Tbsp. gumbo file
- 1 tsp. sugar
- 3/4 c. ketchup
- salt and pepper to taste
- 4 c. chicken stock
- 1 whole chicken, cooked and diced
- 3 lb. boiled and shelled shrimp
- 2 lb. crab meat
- Fry bacon and okra in the butter with a little flour until brown.
- Reduce heat and add scallions, onions, bell pepper, celery, tomatoes, parsley, gumbo file, sugar, ketchup, salt and pepper and chicken stock.
- Simmer for 30 minutes, stirring occasionally.
- Add chicken, shrimp and crab meat.
- Simmer 15 minutes more.
- Serve over rice.
- Makes 8 to 10 servings.
