Seafood Gumbo

  1. Fry bacon and okra in the butter with a little flour until brown.
  2. Reduce heat and add scallions, onions, bell pepper, celery, tomatoes, parsley, gumbo file, sugar, ketchup, salt and pepper and chicken stock.
  3. Simmer for 30 minutes, stirring occasionally.
  4. Add chicken, shrimp and crab meat.
  5. Simmer 15 minutes more.
  6. Serve over rice.
  7. Makes 8 to 10 servings.
