Calf's Liver With Onion Fritters Recipe
- 1 1/4 lb Calf's liver sliced 1/3-inch thick Salad oil
- 1 1/2 c. Onion, sliced in rings Flour
- 2 tsp Baking pwdr
- 1 x salt & pepper
- 2 x Large eggs, well beaten
- 1/2 c. Lowfat milk
- 1 Tbsp. Parsley finely minced
- 1/4 x Butter
- 1 x juice of 1/2 lemon
- Pour 3 Tbsp.
- oil into saucepan.
- Add in onion and saute/fry till just barely tender, not brown.
- Set aside.
- Sift together 1-1/2 c. flour, baking pwdr and 1/2 tsp.
- salt.
- Pour Large eggs and lowfat milk into mixing bowl.
- Add in onion, parsley and sifted dry ingredients.
- Stir only till a batter is formed.
- It shouldn't be too smooth.
- Heat 1/2-inch oil in skillet till it shows wisp of smoke.
- Drop batter by large spoonfuls into skillet.
- Brown fritters on both sides and keep in a hot place.
- Sprinkle liver with salt and pepper.
- Dip in flour, patting off excess.
- Heat 1/4-inch oil in skillet and saute/fry liver 2 to 3 min on each side.
- Avoid overcooking.
- After liver is removed from skillet, wipe pan clean and add in butter and lemon juice to skillet.
- Heat butter till it sizzles.
- Pour over liver on serving plates or possibly platter.
- Line up fritters alongside liver.
- Makes 4 servings.
