Chicken Tamales
- 1 c. yellow cornmeal
- 1/2 c. oat bran
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/8 tsp. chili powder
- 1/4 c. margarine
- 1 c. plus 2 Tbsp. chicken broth
- 8 oz. boneless, skinless chicken breast, cooked and chopped fine
- 1/2 c. tomato sauce
- 4 Tbsp. canned chopped green chilies, divided
- 1 pt. cherry tomatoes, chopped
- 1/4 c. each: chopped cilantro and onion
- 1 Tbsp. fresh lime juice
- Process cornmeal, oat bran, baking powder, salt, cumin, chili powder and margarine in food processor until blended.
- With machine running, pour in broth; process until blended.
- Let stand 20 minutes.
- Combine chicken, tomato sauce and 2 tablespoons chilies in small bowl.
