Corn Salad with Bacon
- 3 slices bacon, chopped
- 1 large onion, sliced Safeway 3 lb For $2.99 thru 02/09
- 5 cups frozen or fresh corn kernels
- 1/4 cup Kraft Zesty Italian Dressing
- 1/2 tsp. crushed red pepper
- 1/4 cup finely chopped chives
- Cook bacon in large skillet over medium-high heat 5 to 8 min.
- or until crisp.
- Using a slotted spoon, transfer bacon to paper towels.
- Add onions to bacon fat in skillet; cook 10 to 12 min.
- or until onions start to brown, stirring occasionally.
- Add corn, stirring until heated through, about 3 min.
- Add dressing and red pepper flakes; stir until combined.
- Transfer to large serving bowl.
- Top with chives and bacon.
- Serve warm or cold.
