Peachy Yams

  1. Drain peach halves.
  2. Arrange halves with cut side up in baking dish.
  3. (To make peaches stand upright, cut thin slice from bottom of each half.)
  4. Cream the butter and mashed yams.
  5. Add brown sugar, orange peel and salt.
  6. Add brandy and blend.
  7. Spoon mixture onto peach halves.
  8. Sprinkle with chopped nuts, brown sugar and cinnamon.
  9. Bake, uncovered, at 350u0b0 to 400u0b0 for 15 to 20 minutes. (Can microwave on High for 4 minutes, turning once during cooking.)
  10. Serves 8.
