Peachy Yams
- 1 to 2 cans (1 lb. 13 oz.) peach halves
- 2 Tbsp. butter, softened
- 2 1/2 c. (1 lb. 1 oz.) sweet potatoes, mashed
- 2 Tbsp. brown sugar
- 1 1/2 tsp. orange peel, grated
- 1/4 tsp. salt
- 2 Tbsp. brandy (optional)
- chopped nuts
- brown sugar
- cinnamon
- Drain peach halves.
- Arrange halves with cut side up in baking dish.
- (To make peaches stand upright, cut thin slice from bottom of each half.)
- Cream the butter and mashed yams.
- Add brown sugar, orange peel and salt.
- Add brandy and blend.
- Spoon mixture onto peach halves.
- Sprinkle with chopped nuts, brown sugar and cinnamon.
- Bake, uncovered, at 350u0b0 to 400u0b0 for 15 to 20 minutes. (Can microwave on High for 4 minutes, turning once during cooking.)
- Serves 8.
