Bean Casserole

• 1 lb. ground beef or Jimmy Dean sausage
• 1 c. chopped onions
• 2 (16 oz.) cans hot chili beans
• 1 (6 oz.) pkg. cornbread mix
• 2/3 c. milk
• 1 c. chopped green peppers
• 1 (14 oz.) can tomatoes, chopped
• 1 egg
• 1 c. grated sharp cheese

1. Brown meat and drain on paper towels.
2. Return to pan; add onions and peppers.
3. Cook until soft.
4. Add beans and tomatoes; cover and simmer for 5 minutes.
5. Pour bean mixture into greased 9 x 13-inch baking dish.
6. Beat egg in small bowl; add milk and cornbread mix.
7. Stir until smooth.
8. Spoon cornbread batter over bean mixture and smooth.
9. Bake at 400u0b0 for 15 minutes or until lightly brown.
10. Remove and sprinkle with cheese.
11. Cook 5 minutes longer or until cheese is melted and sides are slightly brown. Cool 10 minutes before serving.
