Mammy's Shrimp Cakes

  1. Drop fresh shrimps into boiling salted water, and cook until shells turn pink, this should only take about 3-5 minutes at the most.
  2. drain, and cover with cold water to chill.
  3. Drain again and peel and de-vein the shrimp.
  4. Put the shrimp through a food chopper.
  5. Remove the crusts from the bread; cover with boiling water; squeeze dry and crumble.
  6. Add butter and seasonings, and mix well with shrimp.
  7. Shape into flat cakes; place in greased shallow pan and bake at 180C for about 20 minutes, turning to brown both sides.
  8. Or, saute in butter, browning both sides.
  9. Serve with an egg or cheese sauce.
