Quick Minestrone
- 1 (11 oz.) can kidney beans (undrained)
- 1 tsp. salt
- 1/2 tsp. garlic salt
- 1 clove garlic, pressed
- 1/4 tsp. pepper
- 1 Tbsp. oil
- 1/4 c. chopped parsley
- 1 small zucchini, unpeeled and cut into cubes
- 1/4 c. uncooked elbow macaroni
- 2 stalks celery, chopped
- 1 small carrot, diced
- 2 green onions, chopped
- 4 to 5 leaves Swiss chard, chopped
- 3 Tbsp. butter
- 1 (8 oz.) can tomato sauce
- 2 1/2 c. water
- 1/2 c. dry sherry
- grated Parmesan cheese
- Place undrained kidney beans in large pot.
- Mash 2/3 of the beans and leave the rest whole.
- Add salt, garlic salt, garlic pepper, oil and parsley.
- Stir well.
- Add all vegetables, butter, tomato sauce and water; simmer 1 hour or more.
- Add sherry and macaroni; simmer 10 to 15 minutes longer.
- Sprinkle with cheese before serving.
- Serves 6.
