The BEST!!! Double Chocolate Chip Cranberry Oatmeal Cookies
- 2 cups butter
- 2 cups natural brown sugar
- 2 cups raw demerara unbleached cane sugar
- 4 organic eggs
- 2 teaspoons pure vanilla extract
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 cups sifted whole wheat flour
- 2 cups all-purpose flour
- 5 cups quick oats
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
- 1 cup dried sweetened cranberries
- 1 cup raw granulated sugar (finer than demerara)
- omit cranberries
- 1 cup raisins
- 2 teaspoons cinnamon
- 12 teaspoon freshly ground nutmeg
- 1 cup chopped walnuts or 1 cup chopped pecans
- In a mixer, cream together butter and sugars.
- Add remaining ingredients one at a time, incorporating well before each addition.
- With slightly moistened hands (dipped in water), roll dough into balls (golf ball sized) and place onto an non-greased cookie sheet.
- Using a flat-bottomed measuring cup (preferably metal), lightly moisten with water and press into granulated sugar.
- Press dough balls 1/2" thick, reapplying sugar after each cookie press.
- Bake at 375 for 9 to 11 minutes, being careful not to over-bake.
- Cookies are done when edges of cookies are slightly darker and middle is no longer doughy.
- Bottoms should be light.
- Allow to cool on cookie sheet 5 minutes before removing to cooling rack.
