Spicy Dark Fruitcake
- 3 1/2 c. mixed diced fruits and peels
- 1 1/4 c. dark seedless raisins
- 1 1/4 c. light seedless raisins
- 1 c. walnuts, chopped
- 3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. allspice
- 1 c. shortening
- 4 large eggs
- 1 c. pecans, chopped
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 2 c. brown sugar
- 3/4 c. grape juice
- Mix fruits, peels, raisins and nuts.
- Sift together flour, baking powder, salt and spices.
- Sprinkle 1/4 cup over fruit mixture, mixing well.
- Thoroughly cream shortening and sugar.
- Add eggs one at a time, beating well after each.
- Add sifted dry ingredients to creamed mixture alternately with grape juice, beating until smooth after each addition.
- Pour batter over fruits and mix well.
- Line two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans with paper.
- Bake in slow oven at 275u0b0 for 3 to 3 1/2 hours or until done.
