Vegetable Quiche (Low Calorie) Recipe
- 2 1/2 c. raw vegetables
- 4 ounce. grated cheese
- 4 ounce. grated onion
- 1 c. Pet evaporated lowfat milk
- 4 tbsp. flour
- 4 Large eggs
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 teaspoon vegetable oil
- Raw vegetables: cauliflower, broccoli, zucchini, squash.
- Place vegetables in 10 inch pie pan; cover with grated cheese and onion.
- In blender, place lowfat milk, flour, Large eggs, baking pwdr, salt, pepper, and vegetable oil.
- Blend for 15 seconds.
- Pour over vegetables and cheese.
- Bake at 375 degrees for 20-25 min.
