Salmon, Leek, and Green Onion Fried Rice
- 1 piece Cooked salmon (salmon flakes are OK)
- 1 stalk Japanese leek
- 4 to 5 stalks Green onion or scallion
- 360 ml uncooked Plain cooked rice
- 2 Eggs
- 1 Dashi stock granules
- 1 tbsp Vegetable oil
- Finely break up the salmon.
- Chop up the leek and green onion.
- Add the eggs to the rice.
- Microwave the rice first if it's cold.
- Mix the rice and egg together well with a ride paddle.
- Heat oil in a pan, and quickly stir fry the egg-rice over high heat.
- When the rice grains have separated, add the salmon and leek and continue stir frying.
- Season with dashi stock granules.
- Taste, and adjust the seasoning.
- Transfer to serving plates, scatter with some chopped green onion, and it's done.
