Dijon Scalloped Potatoes

  1. Preheat oven to 350F.
  2. Spray skillet with cooking spray and heat on medium high.
  3. Add onion, cook til tender 5-7 mins, stirring often.
  4. Add cream cheese, broth and mustard.
  5. Mix well.
  6. Remove from heat and set aside.
  7. Lightly spray 9x13 pan with cooking spray.
  8. Toss potatoes with cream cheese mixture and spoon into prepared pan.
  9. Combine crackers, parmesan cheese, butter and parsley.
  10. Sprinkle evenly over potatoes.
  11. Bake 50 mins to 1 hour til potatoes are tender.
  12. Let stand 5 mins before serving.
