Chopped Salad
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons sugar
- 1 small garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup olive oil
- 3 cups chopped romaine (1 medium head)
- 1 English cucumber, diced
- 2 medium tomatoes, diced
- 1 yellow bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup fresh flat-leaf parsley leaves
- 1/2 cup brine-cured black olives, pitted and quartered
- Whisk together lemon juice, sugar, garlic, salt, and pepper in a large bowl, then add oil in a stream, whisking until combined.
- Toss remaining ingredients with dressing.
