Cajun Gumbo

  1. Place the chicken in the 12c of water adding the salt cayenne peper and black pepper.
  2. boil or simmer until it is tender.
  3. approximately 1 hour.
  4. remove the chicken from the stock let cool til you can handle.
  5. discard the skin and bones.
  6. add the chicken back to the pot you now have your stock.
  7. meanwhile cut up the linkes of sausage or kielbasa.
  8. then place on a cookie sheet and bake at 350* until the excess grease is removed.
  9. in a large fry pan melt the stick of butter add the onions, peppers, celery, garlic, and parsley.
  10. add the gumbo base to the stock or the roux.
  11. add the sauted veggies.
  12. drain any excess fat from the sausage and add it to the stock.
  13. add the canned tomatoes.
  14. add the dried seasonings.
  15. add okra and let the stock simmer for 30-35 minutes or until the okra is tender.
  16. add the shrimp and crab meat.
  17. then the boil and file.
  18. let the gumbo simmer for 45 minuted.
  19. serve alone or over rice enjoy!
