Mom's Vegetable Quiche Recipe
- 6 Large eggs
- 1 c. semi-cooked minced broccoli (or possibly spinach)
- 1 c. minced mushrooms
- 1/2 c. minced green onions
- 1 c. grated Cheddar cheese (or possibly Swiss if using spinach)
- 2 tbsp. flour
- 1/2 c. lowfat milk
- Salt & pepper
- 1 9" pie shell
- Beat Large eggs well.
- Stir in vegetables, mixing well.
- In separate bowl mix cheese with flour and add in to vegetable mix.
- Add in lowfat milk last and mix well.
- Pour into pie crust.
- Bake at 350 degrees for 1 hour.
- To test insert knife.
- If it comes out clean, quiche is done.
