Sweet And Sour Chicken
- 6 boneless chicken breasts
- 1 Tbsp. margarine
- 1/2 tsp. salt
- dash of pepper
- dash of ground ginger
- 3 Tbsp. water
- 3 stalks celery, cut in 1-inch pieces
- 1 large can chunk pineapple, drained
- 2 Tbsp. brown sugar
- 1 1/2 Tbsp. soy sauce
- 1 Tbsp. vinegar
- 1 Tbsp. cornstarch
- 1 red sweet pepper, cut in chunks
- Spray large skillet with Pam and add 1 tablespoon margarine. Put in chicken.
- Sprinkle with salt, pepper and ginger.
- Add celery pieces and cook until chicken is brown.
- Combine water, brown sugar, pineapple juice, vinegar, soy sauce and cornstarch in saucepan.
- Cook until thickened.
- Add pineapple and red pepper chunks. Pour over chicken.
- Simmer for 15 or 20 minutes to combine flavors.
- Serve over rice.
