Sweet And Sour Chicken

  1. Spray large skillet with Pam and add 1 tablespoon margarine. Put in chicken.
  2. Sprinkle with salt, pepper and ginger.
  3. Add celery pieces and cook until chicken is brown.
  4. Combine water, brown sugar, pineapple juice, vinegar, soy sauce and cornstarch in saucepan.
  5. Cook until thickened.
  6. Add pineapple and red pepper chunks. Pour over chicken.
  7. Simmer for 15 or 20 minutes to combine flavors.
  8. Serve over rice.
