Asparagus And Herb Scrambled Eggs Recipe

  1. In a medium mixing bowl, beat egg whites, lowfat milk and egg.
  2. Stir in cilantro, salt and pepper; set aside.
  3. Preheat large non-stick skillet over medium-high heat.
  4. Add in oil and saute/fry asparagus till tender, about 3 min.
  5. Lower heat to medium and pour in egg mix.
  6. Stir gently till Large eggs are set.
  7. Serve immediately in warmed tortillas and top with salsa.
