Ribbon Salad
- 1 (3 oz.) pkg. lemon Jell-O
- 1 (1 lb.) can fruit cocktail
- 1/4 c. cold water
- 1 envelope unflavored gelatin
- 1 1/2 c. small curd cottage cheese
- 1 (3 oz.) pkg. strawberry flavored gelatin
- Prepare lemon Jell-O according to package directions.
- Pour into 9 x 5 x 3-inch loaf pan.
- Chill until set.
- Drain fruit cocktail, reserving syrup.
- Place syrup in a saucepan.
- Bring to a boil; remove from heat.
- Combine cold water and unflavored gelatin.
- When gelatin is softened, add to hot syrup.
- Stir until gelatin is completely dissolved.
- Add cottage cheese.
- Add drained fruit cocktail.
- Mix well.
- Spoon over chilled lemon gelatin. Chill until set.
- Prepare strawberry gelatin according to directions.
- Pour over cottage cheese mixture.
- Chill until set. Unmold onto lettuce-lined serving platter.
- Makes 8 servings.
