Capirotada (Bread Pudding)
- 1 loaf white bread
- 2 c. brown sugar
- 1 1/2 cinnamon sticks
- 1 tsp. whole cloves
- raisins
- pecans
- peanuts
- coconut, shredded
- candy sprinkles
- 1 lb. shredded Monterey Jack cheese
- Toast bread in oven.
- Combine brown sugar, cinnamon sticks and cloves in a saucepan with 1 1/2 quarts water.
- Bring to a boil, stirring constantly.
- Reduce heat just enough to keep mixture warm. In a 9 x 13-inch baking dish, layer the toast first, then the cheese, next the raisins, pecans, peanuts, coconut and sprinkles (using as much as desired or omitting if you do not like).
- After each layer, pour some of the brown sugar mixture on top.
- When complete, bake in a 350u0b0 oven for 20 minutes.
