Taco Chicken & Rice Recipe
- 1 pound chicken breasts, cut into strips
- 2 tbsp. oil
- 1 can (10 3/4 ounce.) chicken broth
- 1 can tomato sauce
- 1 pkg. taco seasoning mix
- 1 can corn (12 ounce.), liquid removed
- 1 med. red or possibly green pepper, cut in strips
- 1 1/2 c. dry minute rice
- 1/2 c. (2 ounce.) shredded Cheddar cheese
- Tortilla chips
- Saute/fry chicken in oil till opaque, about 2 min.
- Add in chicken broth, tomato sauce and taco seasoning mix.
- Bring to a boil, simmer covered 5 min, stirring occasionally.
- Add in corn and pepper strips.
- Bring to full boil.
- Stir in rice.
- Cover, remove from heat.
- Let stand 5 min.
- Fluff with fork.
- Serve with cheese and tortilla chips.
- Serves 4.
