Cheese Pudding Tart
- 1 Tart crust
- 50 grams Cream cheese
- 35 grams Granulated sugar
- 1 large Egg
- 50 grams Milk
- 70 grams Heavy cream
- 4 cm Vanilla beans
- 3 grams Gelatin
- 15 grams Water
- Make a tart crust by referring to.
- Alternatively you can use a sponge cake or cookie crust.
- Soften the cream cheese.
- Dissolve the gelatin in water over a double boiler.
- Add the cream cheese and granulated sugar into a bowl, and mix until the mixture becomes smooth.
- Add the egg into Step 3, and mix well.
- Heat the milk, heavy cream, and vanilla beans in a pot.
- When it starts to boil around the edges, remove from the heat.
- Add the gelatin to Step 5, and mix well.
- Add this mixture into the Step 4 mixture little by little.
- Strain the mixture from the Step 6 into a bowl, and place the bowl in ice-cold water and thicken the mixture.
- Pour into the Step 1 tart crust, and chill in the fridge to harden.
- Put leftover filing in a separate container.
- Optionally serve with fruit and whipped cream, and it's done.
