Turkey Medallions With Orange Teriyaki Sauce
- corn oil
- 1 large celery stalk, minced
- 1 small onion, minced
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1 lb. raw ground turkey
- 2 tsp. white horseradish
- chopped parsley
- 6 small carrots, sliced in 1-inch chunks
- 1/4 lb. Chinese pea pods
- 1/3 c. orange juice
- 1 Tbsp. light teriyaki sauce
- 1 Tbsp. flour
- parsley sprigs for garnish
- Saute celery, onion, salt and ginger in oil.
- In bowl, mix turkey, horseradish and sauteed mixture plus chopped parsley.
- Make 8 patties and cook in oil.
- In 1 inch of water cook carrots about 5 minutes.
- Stir in pea pods; cover and cook 2 minutes longer.
- In cup, mix juice, teriyaki sauce, flour, 1 tablespoon chopped parsley and 1/3 cup water.
- Stir into skillet from which patties have been cooked.
- Loosen browned bits from pan, boil 1 minute.
- Place patties and vegetables on platter; pour orange over all.
- Garnish with parsley sprigs.
