Classic Rice Pudding
- 2 eggs
- 12 cup caster sugar
- 1 cup water
- 1 cup milk
- 1 teaspoon vanilla
- 1 green apple, peeled, cored, diced
- 12 cup prune, chopped
- 1 cup short-grain rice, cooked
- nutmeg
- Whisk eggs and sugar together in a bowl.
- Blend in water, milk and vanilla.
- Add apples, prunes and rice to batter.
- Stir well.
- Pour into a greased 20 cm ovenproof dish.
- Sprinkle with nutmeg.
- Place pudding dish in baking dish.
- Add enough water to come halfway up sides of dish.
- Bake at 160 C for 45 minutes or till set.
- Remove from water bath.
- Serve warm.
