Burdock Root Consomme Soup

  1. Scrub the burdock root with a brush and wash off the dirt.
  2. Slice it finely and soak in water.
  3. Thinly slice the onion and cut the bacon into 1 cm pieces.
  4. Finely chop the parsley.
  5. Heat oil in a saucepan, add the bacon and onion and fry until the onion has softened.
  6. Then add the burdock root and fry so the oil is distributed evenly.
  7. Add water and consomme and simmer.
  8. When the burdock root has cooked through, season with salt and black pepper.
  9. Transfer to the serving dishes and sprinkle parsley to finish.
