Burdock Root Consomme Soup
- 100 grams Burdock root
- 1/4 Onion
- 2 slice Bacon
- 1 dash Fresh parsley
- 2 tsp Oil
- 500 ml Water
- 1 Consomme cube
- 1 dash Salt, black pepper
- Scrub the burdock root with a brush and wash off the dirt.
- Slice it finely and soak in water.
- Thinly slice the onion and cut the bacon into 1 cm pieces.
- Finely chop the parsley.
- Heat oil in a saucepan, add the bacon and onion and fry until the onion has softened.
- Then add the burdock root and fry so the oil is distributed evenly.
- Add water and consomme and simmer.
- When the burdock root has cooked through, season with salt and black pepper.
- Transfer to the serving dishes and sprinkle parsley to finish.
