Three-Cheese Macaroni
- 3 Tbsp. butter or margarine, divided
- 1/4 c. all-purpose flour
- 1 qt. milk
- 2 tsp. dry mustard
- 3/4 tsp. salt
- 1/8 tsp. ground red pepper
- 1 c. (4 oz.) shredded sharp Cheddar cheese
- 1 c. (4 oz.) shredded Mozzarella cheese
- 1/4 c. shredded Parmesan cheese
- 8 oz. elbow macaroni, cooked
- 1 c. soft breadcrumbs
- 1 Tbsp. chopped fresh parsley
- Melt 2 tablespoons butter in a large heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly 1 minute. Gradually whisk in milk and next 3 ingredients; cook over medium heat, whisking constantly until mixture is thickened and bubbly. Remove from heat and whisk in cheeses until melted. Stir macaroni into cheese mixture and spoon into a lightly greased 2-quart baking dish. Melt remaining 1 tablespoon butter in a glass bowl in microwave at High 30 seconds. Stir in breadcrumbs and parsley. Sprinkle mixture over macaroni. Bake at 375u0b0 for 30 minutes or until top is lightly browned. Let stand 10 minutes. Yield: 8 servings.
