Whole Wheat Soda Bread
- 2 c. whole wheat flour
- 1 c. white flour
- 1/4 c. rolled oats (optional)
- 1/4 c. rolled rye cereal
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 c. sugar
- 1 tsp. salt
- 1 egg, beaten
- 1 1/2 c. buttermilk
- 1/4 c. cooking oil or melted butter
- 2 Tbsp. molasses (optional)
- 2/3 c. raisins
- In a large bowl, combine whole wheat flour and white flour. For variety substitute any or all of the rolled oats and rolled rye cereal.
- Also add the baking powder, baking soda, sugar and salt. In a small bowl, combine egg, buttermilk, cooking oil and molasses.
- Using a wooden spoon, combine the two mixtures, adding a bit more buttermilk if necessary to form a thick batter. Add raisins, if desired. Bake in two greased 7 1/2 x 3 1/2 x 2 1/2-inch pans for 30 to 35 minutes at 375u0b0 until tops are quite brown. Excellent sliced thin and toasted!
