Mexican Layered Sandwich
- 4 flour tortillas
- 2 large lettuce leaves, shredded
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1/2 cup spicy guacamole (optional), save some for top
- 1 cup shredded cheddar cheese
- 1 can sliced ripe olives, drained
- 1 red or green bell pepper, chopped
- 3 sliced green onions
- 2 Tbsp. cilantro or parsley, chopped
- 2 heaping spoonfuls of sour cream
- Salsa (optional)
- Mix cooked drained ground beef with taco seasoning.
- Place 1 tortilla on plate.
- Top with lettuce, half of meat, and another tortilla.
- Spread guacamole even over tortilla.
- (Use sour cream if you don't like guacamole.)
- Sprinkle with half of each: cheese, olives, pepper and onion.
- Sprinkle with cilantro and top with another tortilla and meat.
- Top with last tortilla.
- Spread sour cream evenly on tortilla.
- Sprinkle with remaining cheese, olives, pepper and onions.
- Top with reserved guacamole.
- Serve immediately, or cover and refrigerate up to 3 hours.
- Cut into wedges and serve with salsa.
