Apple Squash Soup

  1. Saute onion in butter until very tender, about 20 minutes.
  2. Add squash, apples, cider and chicken stock.
  3. Heat to boiling.
  4. Reduce heat and simmer, covered, until squash and apples are tender, about 25 minutes.
  5. Process mixture in food processor until smooth.
  6. Season to taste with salt and pepper.
