Apple Squash Soup
- 1 12 cups chopped onions
- 2 teaspoons ground cinnamon
- 14 teaspoon ground ginger
- 14 teaspoon ground cloves
- 18 teaspoon ground nutmeg
- 1 12 tablespoons butter
- 2 12 lbs butternut squash, seeded peeled and cubed
- 2 apples, peeled cored and chopped
- 1 13 cups apple cider
- 3 cups chicken stock
- salt and pepper
- Saute onion in butter until very tender, about 20 minutes.
- Add squash, apples, cider and chicken stock.
- Heat to boiling.
- Reduce heat and simmer, covered, until squash and apples are tender, about 25 minutes.
- Process mixture in food processor until smooth.
- Season to taste with salt and pepper.
