Steak Diane

  1. Season both sides of steak with salt and pepper.
  2. Melt butter in a heavy skillet; add mustard and shallots.
  3. Saute over medium heat 1 minute.
  4. Add steaks and cook approximately 4 minutes on each side for medium-rare.
  5. Remove steaks to serving plate and keep warm.
  6. Add into pan drippings, 1 Tbsp.
  7. butter, lemon juice, Worcestershire sauce and chives.
  8. Cook for 2 minutes.
  9. Add brandy; pour sauce over steaks.
  10. Sprinkle parsley over the top.
