Mashed Potatoes Fried in Green Onions
- 3 cups mashed potatoes
- 1 cup green onion (or 1/4 cup of normal onions)
- 1 tablespoon margarine
- 14 cup water
- 3 garlic cloves (minced)
- 1 teaspoon seasoning salt
- 1 tablespoon chili flakes (optional, substitute desired amount)
- In pan, add quarter cup of water with butter a melt on medium heat.
- Then turn heat high and add garlic onions, fry for 3 minutes.
- Now spoon out mashed potatoes and pat down evenly in pan (fry for 5 minutes - don't worry about burning).
- After 5 minutes the butter at the bottom should be oily enough.
- Pull sides of potato towards centre so it looks like a cone with the top chopped off.
- Bring pan up and flip potatoes in air (it sounds hard, but it's really easy.
- The bottom is oily, to move potato from top to bottom about 3 times for momentum, then on the 4th try flip the potato.
- The won't work if you're using a skillet.
- Make sure the pan you have is curves on the sides).
- Flatten the potato patty again (this should somewhat mix the green onions, and garlic and fry for another 5 minutes on high.
- Repeat this step 3 times (this is somewhat entertaining for children to watch, the next best thing is to douce it with cooking wine and light it on fire).
- Now garnish with more green onions and service.
