Chicken Cacciatore
- 4 to 5 lb. roasting chicken, cut in serving pieces
- 4 Tbsp. olive oil
- 1 large onion, coarsely chopped
- 1/2 c. flour
- 1 Tbsp. salt and pepper
- 2 c. canned tomatoes
- 2 medium green peppers, chopped
- 1 clove garlic
- 1/2 c. chicken broth
- 1/4 tsp. each: marjoram, oregano, basil and rosemary
- This is one of the most popular Italian chicken dishes.
- Put 1/2 of the olive oil in a large casserole over low heat and cook onions until soft.
- Roll chicken pieces in flour, salt and pepper. Skim out onions and reserve.
- Add remaining oil to casserole. Brown chicken and return onions.
- Add tomatoes, pepper, garlic and herbs.
- Cover closely and simmer over low heat, about 1 hour, or until chicken is very tender.
