Autumn Apple Cake
- 3/4 c. melted margarine
- 3/4 c. Wesson oil
- 2 c. sugar (I prefer less)
- 3 eggs
- 3 c. sifted flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 3 c. apples (Delicious), peeled, cored and sliced thick
- 1 c. chopped walnuts
- 1 c. raisins
- 1 1/2 tsp. baking soda
- Preheat oven to 350u0b0. Beat oil, margarine and sugar together. Add the eggs.
- Beat until creamy.
- Use an electric mixer.
- Sift together the flour, salt, cinnamon and soda; stir into batter. Add all the remaining ingredients and stir to blend. Turn the mixture into a 9-inch angel food tube pan. Bake at 350u0b0 for about 1 hour or until done. Cool in pan before turning out.
- Serve at room temperature with rich vanilla ice cream.
