Holiday Blintzes (Kosher)

  1. Beat milk, matzo meal, eggs and salt with electric mixer on medium speed until smooth.
  2. Let stand 30 minutes.
  3. Using 2 tablespoons batter for each blintz, cook in hot, lightly greased 8-inch skillet or crepe pan on one side only until lightly browned.
  4. Mix cottage cheese, sugar and juice.
  5. Place 2 rounded tablespoons cottage cheese mixture on browned side of each blintz.
  6. Roll up, folding sides toward center.
  7. Brown blintzes on both sides in margarine in large skillet.
  8. Top with combined sour cream and preserves.
