Holiday Blintzes (Kosher)
- 1 cup milk
- 1/2 cup matzo meal
- 2 eggs, beaten
- 1/2 tsp. salt
- 1-1/2 cups BREAKSTONE'S Cottage Cheese
- 2 Tbsp. sugar
- 1 tsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- margarine
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup
- Beat milk, matzo meal, eggs and salt with electric mixer on medium speed until smooth.
- Let stand 30 minutes.
- Using 2 tablespoons batter for each blintz, cook in hot, lightly greased 8-inch skillet or crepe pan on one side only until lightly browned.
- Mix cottage cheese, sugar and juice.
- Place 2 rounded tablespoons cottage cheese mixture on browned side of each blintz.
- Roll up, folding sides toward center.
- Brown blintzes on both sides in margarine in large skillet.
- Top with combined sour cream and preserves.
