Simple Chinese Cellophane Noodle Salad

  1. Cook the noodles for about 3 minutes and drain in a colander.
  2. Run under tap water and drain well.
  3. Julienne the cucumber and shred the crab sticks thinly.
  4. Make the kinshi-tamago.
  5. Beat one egg and divide into two portions.
  6. Fry two thin omelets in a frying pan and julienne.
  7. Make sure the noodles are drained really well.
  8. Put all the ingredients and seasonings in a bowl and mix.
  9. Transfer to a serving dish.
  10. Serve.
