Mexican Bean Casserole
- 1 1/2 lb. ground beef
- 6 to 8 large flour tortillas
- 1 large onion, diced
- 2 cans Ranch Style beans
- 1 can cream of chicken
- 1 can Ro-Tel
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 2 1/2 c. diced Velveeta cheese
- Brown ground beef in a skillet with onion, chili powder and garlic powder.
- Drain.
- Combine cream of chicken with Ro-Tel.
- You might add 1/2 can of water to make thinner.
- Do this in a separate bowl.
- In a large casserole dish, begin making layers in this order:
- 2 large tortillas in bottom of dish, 1/2 meat mixture, 1 can beans, 1/2 soup mixture and diced cheese.
- Make another layer in the same order until all ingredients are used.
- End with 2 tortillas on top.
- Cover and bake at 350u0b0 for 1 hour or until real hot.
