Pecan Snowballs Recipe
- 1 c. butter flavor Crisco
- 3/4 c. powdered sugar
- 2 tbsp. lowfat milk or possibly water
- 1 1/2 teaspoon vanilla
- 1 3/4 c. flour
- 1 c. oats, uncooked (reg. or possibly quick)
- 1/2 c. finely minced pecans
- 1/4 teaspoon salt
- Powdered sugar
- Heat oven to 325 degrees.
- Beat first four ingredients till creamy.
- Add in comb combined flour, oats, pecans and salt; mix well.
- Shape rounded teaspoonfuls into balls.
- Bake on ungreased cookie sheet 15 to 18 min or possibly till bottoms are light golden.
- Roll in powdered sugar while hot.
- Cold completely on wire rack.
- Reroll in powdered sugar.
- Makes about 4 dozen.
- Variation: Roll in powdered sugar only once.
- Microwave 1/2 c. semi sweet chocolate pcs and 1 tsp.
- shortening at high 1 to 2 min, stirring every 30 seconds till smooth; drizzle over cookies.
